Thanksgiving
Happy Thanksgiving! On this cold morning, we went to the Thanksgiving Parade! This evening we will have dinner with the family. Hope everyone is enjoying this day with family and friends!

Winter Frosted Pumpkins
Thanksgiving is on it's way! I wanted to share a very simple easy SOOO GOOD low fat healthier LOW COST super moist treat my friend Jessica gave me that you can make for your Thanksgiving day!
You will need 1 box of Spice Cake.
1 can of pure Pumpkin Puree.
1 teaspoon - more or less to taste of Cinnamon (optional).
1/4 cup Water.
Cool Whip frosting or home made cream cheese icing or non at all.
Mix the cake mix, cinnamon, pumpkin and water together until smooth and well blended - and that is it! NO eggs or oil needed.
Next, bake in a muffin tin (makes 16) or cake pan of choice. I prefer using a muffin pan filled up 3/4 of the way.
Bake at 350 for 15 to 20 minutes - until the cake is done.
Cool down and frost with your favorite frosting. I use the Cool Whip frosting, however when using this you must keep the muffins refrigerated or just keep the frosting refrigerated and frost each muffin as you go! A homemade cream cheese is wonderful on these as well. You can also skip the frosting for a Vegan treat and sprinkle pumpkin seeds on top BEFORE you bake them for added taste and texture. Enjoy!
